Miso Salmon with Quinoa & Roasted Butternut Squash
A balanced dinner when you want care without complexity.
Welcome to the Taking Care Circle — the private space within this Substack where we explore the deeper layers of calm nourishment, mindful routines, and taking care on and off the plate. Inside the Circle, you’ll find exclusive guided reflections, body-awareness practices, recipes, Q&A conversations, kitchen and garden notes, and the everyday rituals that shape a more peaceful relationship with food and yourself.
This balanced recipe is part of my “Let’s Take Care & Eat” series, where I share calm, nourishing meals made with the Foundational Five. If you enjoy recipes that feel like a deep exhale, subscribe for weekly inspiration straight from my kitchen and garden.
There’s something deeply grounding about the quiet ritual of baking salmon—the steady hum of the oven, the scent of miso caramelizing just enough to turn golden at the edges. This is one of those meals I return to when life feels full, but I still want to take care.
When working with my clients, typically week between weeks 2-4, we dive into rebuilding structure around food and actually coming up with a plan for “what” to eat. Let’s take a look behind the scenes at some of my most popular recipes, including this one, that my clients love for easy dinners.
